Topher’s First “Big Game”

Christopher has decided that he wants to be called “Topher” or “Toph”. Mom loves the nickname but Dad hasn’t really caught on to using it. It’s pretty funny to hear him tell people that’s what he wants to be called. He told us he didn’t want to be called Topé because he thought that the kids at school might make fun of him. We tried to reassure him that the kids would think it was cool but he wanted something more “English” sounding. So that’s where “Topher” comes from.

We have pizza night at our house on Sundays. We put on a movie and eat pizza on Sunday nights. It’s a special treat for everyone. I’ve recently restarted my sourdough and have used the dough for pizzas in the past, so instead of ordering pizzas for the Super Bowl, Dad decided he’d make some. We did a dry run the week before and it turned out pretty good. In the summer the pizzas are done out on the charcoal grill, which makes them doubly good. Since it’s cruddy out and the grill isn’t out yet we just did a traditional oven baked pizza.

We tried to sufficiently hype up the game, but he’s just not that into football. I’d say we’re not a huge football family in general, but it’s fun to make something out of game day. Game day prep started the day before to make sure the dough had time enough to rest. Making sourdough requires some planning ahead. I’ll post my recipe here soon, so stay tuned.

Generally speaking, the amount of dough my recipe makes is perfect for two little sheet pizzas or one loaf of bread. I couldn’t have planned it better if I tried. Of course we had to have chicken wings too. I do a baked wing following Chef John’s methods. I had a hard time deciding what to dress the wings in and, in the end, decided to go with a family favorite of South Carolina Mustard BBQ Dressing. That particular recipe was a little sweeter than I like, so I would recommend cutting the brown sugar and amping up the vinegar a little bit, but dang, it’s still the best sauce ever.

The wings took close to an hour to bake at 425F, but the pizzas were done in just under 20 minutes at 550F. If I could get the oven hotter, I would have, which is why the bbq grill is so much better for baking pizzas. Pro tip, a well buttered pan is really the key to preventing any sort of dough sticking. I was so happy with the results.

Timing was perfect, just as the wings were ready and waiting, all sauced up, the pizza was just coming out and the kick off was just under way. The reviews were in, the pizzas were superb. Mom was super impressed and so was I, to be honest. Christopher was really happy with both the wings and the pizza, and we saved a ton of money and hassle by just doing it ourselves. I could definitely get used to homemade pizzas.

We all enjoyed dinner so much, and the best part was we ate one of the pizzas and we had the other for the next day, and a few wings even survived. I’m happy to report the pizza even reheated well! Double win!

Christopher was trying to figure out who to cheer for. Mom was pulling for the Rams while Dad was hoping to see “the bad guys” win. I’m no Pats fan, but hey! You can’t knock the history! Never in our life times will we see another football dynasty like this again. Either way, we all enjoyed watching the game! We hope you all did too!
